2015 (dry) Riesling, Zabala Vineyard
Aspiring to make a dry, old-world style of Riesling, Mercy sourced two Germanic clones from vines set in extremely rocky, low-yielding topsoil. Hand-picked in late-September at 21.4º (average) Brix, the winery received golden colored fruit: two-thirds Geisenheim 110 clone and one-third Neustadt 90. Fermented together, the grapes were whole-cluster pressed and racked into a stainless steel tank; a tiny amount of un-fermented juice was retained for a Süssreserve and the balance inoculated utilizing VL1 isolate. At dryness the wine was racked to stainless steel barrels where it aged for five months with a touch of sweet juice added back just prior to bottling.
Fermented dry, with just the slightest touch of sweetness added back for texture, this “troken” style Riesling showcases aromas of orchard fruit as nectarine and pear notes mingle with honeysuckle, fennel, pollen and minerals in the bouquet.
